Friends gather around one pipe, take turns, talk, and let the evening stretch out, a custom with centuries of history across the Eastern Mediterranean and Middle East. Here is what to expect, from how a hookah works to choosing your first flavor and sharing it well.

How a Hookah Works

A hookah has four parts: a bowl at the top, a stem, a water base, and one or more hoses. The bowl holds shisha, a moist, flavored tobacco, and hot coals sit above it so the heat warms the shisha rather than burning it. When you draw on the hose, the smoke travels down the stem, bubbles through the water in the base, and cools before it reaches you. That is why heat matters so much: too little and the flavor is faint, too much and it turns harsh. A good session is a steady balance between the two.

Choosing Your First Flavor

Most first-timers start with something familiar: a single fruit or mint flavor, or a simple blend of two or three. Fruit with mint is a classic pairing, bright and cool at once. Floral and dessert-like blends, such as rose with vanilla, are softer and sweeter. If you are unsure, describe what you like in a drink and let your server suggest a match.

Pacing and Sharing

A hookah is made for sharing and for taking your time. Take slow, gentle draws rather than deep pulls; drawing hard only overheats the bowl. Let the hookah rest for a moment between turns, and when you pass the hose, hand it over with the mouthpiece turned away from your friend. If the flavor starts to fade or taste sharp, let your server know: the heat can be adjusted during a session, and a refill brings a fresh bowl with the same flavor or a new one.

What to Eat and Drink Alongside

Hookah evenings tend to run long, so small plates to share suit them best. A few mezze, such as beetroot hummus, muhammara, and kebbeh balls, keep the table going without interrupting the conversation. For drinks, something cool and fresh balances the warm smoke: a fresh mint lemonade, a virgin mojito, or a pot of tea for a slower pace.

Hookah is for guests 21 and older under California law, and a valid ID is required.
